A Wild Ramp Recipe: Crunchy Apple Salad

Or try this apple salad with a lighter dressing. The result is a bold crunchy salad that can be made in 10 minutes. Crunchy Apple Salad
2 tablespoons olive oil2 tablespoons fresh lemon juice
¼ teaspoon salt
¼ teaspoon pepper
1 tablespoon sugar, optional
2 apples, chopped
1 large celery stalk, chopped
Several sprigs of fresh parsley, chopped
¼ cup red onion, chopped
1/3 cup toasted walnuts, chopped
Combine the first 5 ingredients in a large bowl. Add remaining ingredients and toss to combine.
