A Wild Ramp Recipe: Crunchy Apple Salad
The Wild Ramp has a very nice selection of apples from Furhmann Orchards. You may want to think about preparing a traditional Waldorf salad for a quick side to a meal this week. Or try this apple salad with a lighter dressing. The result is a bold crunchy salad that can be made in 10 minutes. It has great flavor and unparalleled freshness when made with some of the apples you’ll find in our produce section.
Crunchy Apple Salad
2 tablespoons olive oil2 tablespoons fresh lemon juice
¼ teaspoon salt
¼ teaspoon pepper
1 tablespoon sugar, optional
2 apples, chopped
1 large celery stalk, chopped
Several sprigs of fresh parsley, chopped
¼ cup red onion, chopped
1/3 cup toasted walnuts, chopped
Combine the first 5 ingredients in a large bowl. Add remaining ingredients and toss to combine.
